How should I store olive oil?
Olive oil requires careful storage in a cool, dark environment, away from light and major temperature fluctuations. Choose metal, ceramic, or tinted glass containers to prevent degradation from light. The ideal storage temperature range is between 15 and 23 degrees Celsius. Make sure the bottle is tightly sealed to prevent air from causing oxidation. It is best to use the oil within 18 months of the bottle's manufacturing date to maintain its highest levels of flavor and nutritional value.
We offer for sale attractive and practical stainless steel barrels with large capacities to preserve all the flavors of your oil.

Crushing
How do we crush our olives at the Moulin de l'Huilerie Sainte-Anne?
Everyone can bring their olives to be crushed in our mill.
This ranges from the small producer, with a single olive tree in the garden, to the family orchard.
Then, you can benefit from a joint tour (without minimum quantity of olives) or a personal tour (from 350 kg of olives). Find all the desired information in the CRUSHING section.
What are the different stages of crushing?
Crushing takes place in 3 stages:
Step 1: Stripping and washing
Step 2: Grinding and Mixing
Step 3: Extraction and centrifugation
Find all the detailed information with photos in the CRUSHING section.
What are the prices for a personal tour and a group tour?
PERSONAL TOUR 2023 price
By appointment from 350 kilos of olives
Price: €1.00 including tax per kg of crushed olives
JOINT TOUR 2023 price list
No minimum quantity
Price: €1.10 including tax per kg of crushed olives
Find all the information you need in the CRUSHING section.
What is the minimum time limit for collecting your oil after dropping off the olives?
If you have an appointment for a personal tour (more than 350 kg) you will collect your oil the same day. For ordinary olives, the deadline is at the earliest 10 days after depositing your olives and before 03/31/2024. The schedule must be confirmed with the Mill Master at the time of the appointment. We will do our best to satisfy you. Find all the desired information in the CRUSHING section.
In the joint round, will my olives be mixed with those of other customers?
Yes, absolutely, but rest assured, all the olives come from local gardens, so they will retain all their authentic flavor.
When I take my olives to the mill, do I have to sort them?
It is imperative for health and quality reasons to sort your olives. There should be no leaves, branches, stones, or other foreign objects with the fruit.
It is also imperative to bring fruit in perfect sanitary condition (freshly picked, without mold, without fermentation, little pitted, etc.).
What types of equipment do you use to crush olives?
Over time, the mill has been modernized. We have moved from the bucket wheel, the scourtin presses and the stone millstones to today a continuous Alfa Laval line equipped with a 3-phase decanter with a production capacity of 1000 kg/h.
The Mill and the shop in Grasse
How long has Huilerie Sainte-Anne been in existence?
In the heart of Provence, our mill, founded in 1706 by our family elders, embodies the tradition of our region. A land of perfume and olive trees, Grasse once boasted more than thirty mills. Today, it is one of the last two in the Grasse region.
The mill has belonged to the same family since the last quarter of the 18th century.
Today, under the passionate leadership of Marie-Edith, Louis, Anne-Gabrielle de Villers and our Mill Master, Mathieu Mercier, the Mill vibrates with a new energy.
Who is the Master of the Sainte-Anne Oil Mill?
The Millmaster is Mathieu Mercier. He puts all his passion and expertise into the Huilerie Sainte-Anne. He produces our 11 traditional olive oils and our 11 infused olive oils. He also handles the crushing.
He can also show you around the mill and let you taste the olive oils (see the boxes "Can we visit the mill?" and "Do you organize tastings?")
Can we visit the Mill?
In ancient times, the ancients called olive oil "yellow gold," praised for its medicinal, cosmetic, and flavorful properties. It's a treasure we cherish, and we invite you to discover its history and that of this precious place during a guided tour.
