Château des Creissauds vintage Pastis is made from fresh plants grown and harvested at Domaine des Creissauds, in Aubagne, Provence. Between May and September, the plants are harvested fresh and macerated immediately (to preserve all their aromas) and separately in high-quality alcohol for several weeks. All the macerates are then blended to be aged in barrels for approximately 6 to 10 months. Like fine wines, each harvest brings different nuances due to climatic variations. This is why Château des Creissauds Pastis is vintage-aged to allow the natural variations of the terroir to freely express themselves. It is aimed at the high-end market for more complex and refined pastis.
